  1. Preparation of Bell Peppers: Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly season the insides with salt and set aside.
  2. Cook the Hamburger Mixture: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Stir in minced garlic and cook for another minute. Add the hamburger meat, breaking it apart with a spatula. Cook until browned. Stir in the drained diced tomatoes, paprika, oregano, and cooked rice. Season with salt and pepper.   3. Stuff the Bell Peppers: Evenly distribute the hamburger mixture into each of the prepared bell peppers. Place the stuffed peppers upright in a baking dish. If they have trouble standing, you can trim a thin slice off the bottom of the pepper to help it stand straight.
  4. Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil, sprinkle the tops of the peppers with the shredded cheese, and return them to the oven. Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  5. Serve: Plate the stuffed bell peppers, garnishing with chopped fresh parsley and a dollop of sour cream if desired.
